Abstract: Ice cubes, known as frozen water, are complementary products that are often served with cold drinks and are considered safe for consumption. Coliform bacteria is a type of bacteria that is used as an indicator of water pollution. The presence of coliform bacteria in food or drink indicates that it may contain enterohepatic and/or toxigenic microbes that are harmful to health. This review aims to determine the level of Coliform bacteria contamination in ice cubes using the MPN 3-3-3 method. The research was conducted in the form of a systematic review and was designed descriptively which aims to determine the presence of coliform contamination in ice cubes. Based on the results of the study, in the first article it was found that 8 samples were contaminated with coliform; in the second article, from 3 samples it is known that 2 samples meet the contamination limit, while 1 sample exceeds the coliform contamination standard limit; in the third article, from 21 samples of ice cubes, it was found that 21 samples of ice cubes exceeded the maximum microbial limit; in the fourth article, from 10 samples, it was known that all samples were contaminated with Coliform; and in the last article, from 7 samples it was known that all samples contained Coliform bacteria which did not meet the requirements of the Indonesian Minister of Health Regulation Number 492/MENKES/PER/IV2010, the MPN number for Coliform bacteria was 0.
